In our side of the world, interest rate on loans rose just two days ago. It was a very big leap. I'm sure home owners who have mortgage are not happy about it. On the other hand, savings account rate is also high. You can get the best rate there is if you your research. One of our banks has high interest rate on its savings maximizer account.

Mince Meat with Mixed Veggies


My creation when I was mucking around the kitchen one weekend.

This is very easy to cook and good with rice or mashed potato. I like the smell when cooking this.

How I cooked it? Simple. I just placed the meat in the pan; pour soy sauce; put a pinch of salt, a teaspoon of garlic and ginger; and let them brown. Then put the mixed veggies. I just used the frozen pack. Cook until meat is tender and veggies are soft.

We had this with rice. Yum!

Watermelon

This is the first fruit that my son tasted when he was two weeks shy from 4 months. He loved it. That was when I realized he's going to love to eat anything as he is now.

Normally, abundant supply of this sweet fruit is during summer. That's when they are juicy and really sweet and red.

It is a good source of Vitamin C, carotenoid (one of the three major source of lycopene) and dietary fiber. It is fat-free. The sugar content is higher than other melons but mainly sucrose though it also has fructose and glucose.

Like rock melons, you can keep them at room temperature but once cut, needs to be refrigerated and use within 3 days.

Saving Grace

Funny sometimes when you realize that there are things that are evil if you don't have and evil if you have. I'm talking of credit cards, dear. Pumpkin

Jens is a pumpkin baby. His vegetable always have pumpkin since he started eating them. He loves it. Aside from it being sweet, it is also easy to prepare. I bought half or quarter butternut or Queensland Blue pumpkin and Jens could not eat it in 48 hours. So I peeled it then freeze some that I can't use in the next 48 hours.

Pumpkin is very versatile. We know that it's a vegetable but we also use it on halloween.

It is also very nutritious - contains beta carotene, pro-vitamins (convert to vit A in the body), niacin, dietary fibre, vitamin C and it is fat free.

I remember, we used to call pumpkin, squash back in my parents' place.

Mangoes

This is what the green mangoes here look like. Very far from the Philippines. But I never have eaten much of them than when I was pregnant. One afternoon, Hubs brought home two bags of them. I don't like them ripe because of their pungent smell, so I had green mango/es everyday for more or less two weeks.

Mangoes are know to be the king of fruits, why? I just don't know. :)

When ripe, they are a good source of vitamin C like most fruit are, beta carotene and other carotenoids. Plus, it also has some dietary fibre.

It ripens at room temperature when harvested mature. When ripe keep them in the vegetable crisper of the fridge or in a plastic and use within three days.

Banana

Jens loves banana and so is Mummy. It's been part of our breakfast, his lunch and afternoon tea.

Cavendish banana here is on it's cheapest so we take the opportunity to eat it always.

Bananas are good source of dietary fiber, vitamin c, potassium which helps helps keep your heart, nervous system and kidneys healthy, and vitamin b6. It is believed to be rich in fat, but no. The average size banana has just 450Kj.

When buying, select bananas at different stages of ripeness so they wont get ripe all at the same time. Choose a shiny and unblemish piece in the shop.

You can get them to ripen at room temperature and keep them in the fridge after then. The skin might turn dark or blemishy but the flesh would still be alright.

Rock Melon


This was Jens dessert the other day. It was his first day to try the rock melon and he loves it.

Rockmelon is a rich source of vitamin C. A 200 gram serve is equivalent of 200% RDI of vitamin C. The deep orange variety contains beta carotene and other members of carotenoid family. Plus, it is low in kilojoules.

When buying rock melon, select those with a sweet aroma and a pronounced netting on the skin. Background colour should be beige to golden.

It don't get ripen after harvent, just get soft so store in room temperature. After it's cut, cover and refrigerate.

Fish and Chips

Fish and chips is a cheap and popular take-away (take-out for you in the RP) in Australia. It consist of deep-fried fish (could be cod or any fish) in batter and crumbs with deep-fried chipped (in slab-cut) potatoes. Don't get confused the chips with fries. Chips are cut bigger.


Often, it comes with lemon for the fish. I guess to take the fishy taste on it - I prefer it plain. It doesn't come with a free sauce unlike when you buy fries in other take-away stores which comes with tomato sauce. But you can dip the fish and chips on any sauce that you like, could it be gravy, mayonaise, chilli sauce, etc.

Our Midnight Snack

Mcj asked me if I want some of this. Of course! This is just a left-over. We eat straight from the container. I didn't have much as I'm about to hit the hay. Mcj said, he wanted coffee. With ice cream? He said, I'll just have orange juice then. :)

This is my favorite flavour - rich choc chip.

Lunch

This is Mcj's favorite lunch. Grilled cheese sandwich - cheese, tomatoes and onions. I like it too but too savory for my taste. I can't down the whole sandwich.


When I am homesick, this is my respite - pinoy food.
I bought this boneless dilis when I was pregnant and I still have some left.
When Mcj saw me eating this with rice for lunch, he said, I must have missed it very much. I just grinned, can't talk as my mouth was full. :)

What's for Dinner?

... food. That's my naught reply to Mcj if he asked me that question. :)

Tonight, I cooked adobo (my version), stir-fry veggies (also my version) and rice.


I didn't marinade the chicken at all because I was just able to take them out the freezer around lunch time. I even used the solar energy to thaw them out. I just put them in the pan - add salt, soy sauce, pepper, apple cider vinegar, water, garlic - and cooked it for an hour or more. I add some sugar also.

Mcj said it was very tasty. I'm happy that he liked it. It was all an experiment so don't ask me the measurement of the ingredients.
Did I say, this is stir-fry? Well, my version that is. I wanted to overcook the veggies as Mcj has sore teeth and can't chew tough food, that's why. We don't normally use chicken stock, so I used the broth from the chicken soup in a can. Looks oily? It doesn't taste that. But it's yummy!

I wanted to eat stir-fry veggies just like what we buy from chinese resto and my cooking taste almost like it. :)
I couldn't perfectly cook the rice here even if I use rice-cooker. The rice is just too different from what I used to cook in RP. Oh well, I don't worry about it that much as we don't eat rice too often anyway.
